I am a strong believer of eating outside the terminals (airport, seaport, train station, etc) due to the fact that most visitors are passer bys. There can never be a regular customer at terminals. Both supply and demand care less about the overall quality of the food.
Old Street Bak Kut Teh at Changi Airport Terminal 4 was also pretty generic in terms of quality. Pork smell was a bit stronger than usual. Pepper aftertaste was also less dramatic at the terminal outlet. One surprise was the electronic order system.
