[KR] Gom Ba Wie 곰바위 @ Samsung-dong 삼성동, Seoul

Gom Ba Wie 곰바위 is a michelin star restaurant nested near COEX, Gom Ba Wie 곰바위specializes in dishes crafted from beef intestines. The establishment’s signature offerings include yang gui 양구이 (grilled beef tripe) and daechang gui 대창구이 (grilled beef large intestines), both of which are expertly charcoal-grilled to enhance flavor and preserve their distinctive springy texture. Additionally, the restaurant is famous for its gopchang jeongol 곱창전골 (beef small intestine hot pot), a popular choice during the winter months, as well as its unique rendition of baekkimchi 백김치 (white kimchi). Michelin guide puts it like this:

  • Grilled tripe and large intestines reign supreme at Gom Ba Wie, which has seen three decades of customers hooked on their buttery, pleasantly chewy goodness. The original location and the new location stand back to back, offering a glimpse of the restaurant’s past and present. If beef intestines aren’t your cup of tea, the restaurant also offers other cuts like ribeye, short ribs and brisket. All meats are grilled over wood charcoal.

We tried the beef menus. We started off with the beef tongue – which was the fattest cut I’ve ever seen. They were soft at the bite and juicy all the way in. You can ask for the thinly-sliced version as well. The second menu was the Hanwoo marinated beef 한우양념갈비. This marination was perfect and it had a great balance between sweet and tenderness. The detailed cuts on the outside made the beef amazingly juicy and tender at the bite. Their flagship product – Daechang gui 대창구이 was also incredibly juicy. However, it is not recommended mixing the intestines with the beef cuts as the combination is not so well-balanced. Naenymyeon 냉면 was pretty refreshing with interesting noodle texture. The noodles had some interesting sound at the bite.
